Spaghetti Aglio e Olio

A classic Italian pasta dish with garlic, olive oil, and a hint of spice. Preparation Time: 20 minutes
Serving Size: 2 servings
Ingredients:
- 200g spaghetti
- 4 cloves garlic, thinly sliced
- 60ml extra virgin olive oil
- 1 teaspoon red pepper flakes
- Salt, to taste
- Fresh parsley, chopped (for garnish)
- Grated Parmesan cheese (optional)
Instructions:
1. Bring a large pot of salted water to a boil. Add the spaghetti and cook according to package instructions until al dente.
2. While the pasta cooks, heat the olive oil in a large pan over medium heat. Add the sliced garlic and red pepper flakes, and sauté until the garlic is golden but not burnt.
3. Reserve 1/2 cup of pasta water, then drain the spaghetti.
4. Add the drained spaghetti directly to the pan with the garlic oil, tossing to combine.
5. If the pasta seems dry, add a little reserved pasta water until you reach your desired consistency.
6. Season with salt to taste and garnish with chopped parsley.
7. Serve immediately, with grated Parmesan cheese if desired.
