A delicious Finnish dish featuring pan-fried sprat fillets, perfect for a light meal. Preparation Time: 30 minutes

Ingredients:
- 400 g sprat fillets
- 1 dl breadcrumbs
- 1 dl all-purpose flour
- 2 eggs
- 1 dl milk
- 1 tsp salt
- 1/2 tsp black pepper
- 2 tbsp butter for frying
- Fresh herbs (such as dill or parsley) for garnish
Instructions:
1. Rinse the sprat fillets in cold water and pat them dry with paper towels.
2. Prepare the batter: In a bowl, mix the breadcrumbs, flour, salt, and black pepper.
3. In another bowl, crack the eggs and add the milk. Mix well.
4. Dip the sprat fillets first in the egg mixture, then coat them thoroughly in the breadcrumb mixture.
5. Heat the butter in a frying pan over medium heat.
6. Fry the sprat fillets for about 3-4 minutes on each side until they are golden brown.
7. Remove the fillets and place them on paper towels to drain excess oil.
8. Serve warm, garnished with fresh herbs, and enjoy with boiled potatoes or rye bread.
