Silakka Patties with Mashed Potatoes

A classic and budget-friendly dish that the whole family will enjoy. Preparation Time: 30 minutes

Ingredients:
- 600 g herring fillets - Freshly ground black pepper
- Salt to taste
- Fresh dill, chopped
- About 1 dl rye flour
- Butter for frying
Instructions:
1. Lay half of the herring fillets on a cutting board lined with parchment paper, skin side down.2. Season the fillets with black pepper and salt. Sprinkle chopped dill over the herring.
3. Place the remaining herring fillets on top of the seasoned fillets, skin side up.
4. Season the rye flour with salt and pepper.
5. Roll the patties in the rye flour until they are evenly coated.
6. Fry the herring patties in butter on a skillet until they are golden brown and crispy on both sides.
7. Serve the herring patties with mashed potatoes.
