This delicious herring and beetroot soup combines the flavors of the sea with the sweetness of root vegetables. It is a nutritious and tasty dish, perfect for autumn gatherings.

Ingredients:

- 1 tsp thyme
- 1 dl fresh basil, chopped
- 2 chopped onions
- 1 tsp fine sea salt
- 4 fresh beetroots, sliced
- 0.25 tsp freshly ground black pepper
- 4 dl fish stock or water
- 4 potatoes, sliced
- 0.5 tsp sugar
- Cooking oil
- Herring fillets, cut into pieces
- 2 garlic cloves, minced
- 2 tbsp red wine vinegar

Instructions:

1. Heat cooking oil in a pot over medium heat.
2. Add the chopped onions and sauté for about 5 minutes until they are soft.
3. Add the sliced beetroots and potatoes along with the thyme. Sauté while stirring for a few minutes.
4. Pour in the fish stock or water and add sea salt, black pepper, sugar, and garlic. Bring to a boil.
5. Reduce the heat and simmer the soup for about 20 minutes until the beetroots and potatoes are tender.
6. Add the herring fillets and red wine vinegar. Let the soup cook for another 5 minutes.
7. Finish the soup with fresh basil and serve warm.
