A delicious and creamy beetroot soup, perfect for a cozy meal.

Ingredients:
- 500 g beetroots
- 1 onion
- 2 cloves of garlic
- 3 potatoes
- 1 liter vegetable broth
- 200 ml cream
- Salt and pepper to taste
- Fresh herbs (e.g., parsley) for garnish
Instructions:
1. Peel and chop the beetroots, onion, garlic, and potatoes.
2. In a pot, heat a little oil and sauté the onion and garlic for a few minutes.
3. Add the beetroots and potatoes to the pot and continue to sauté for a few more minutes.
4. Pour the vegetable broth into the pot, ensuring the ingredients are covered. Cook for about 20-30 minutes until all ingredients are soft.
5. Blend the soup with an immersion blender or a regular blender until smooth.
6. Stir in the cream and mix well. Season with salt and pepper.
7. Heat the soup again but do not bring it to a boil.
8. Serve the soup warm, garnished with fresh herbs.
