Ingredients:
- 1 onion
- 1 apple
- 300 g pickled beetroot
- 4 potatoes
- 1 vegetable stock cube
- 200 ml soy cream
- 1 tsp herbes de Provence
- 0.5 tsp salt
- 1 tsp sugar
- water
Instructions:
1. Peel and dice the potatoes, apple, and onion.
2. Drain the pickled beetroot and chop if necessary.
3. Add the vegetables, water, and spices to a pot. Ensure the water covers the vegetables.
4. Bring to a boil and let the soup simmer for about 20 minutes, until the vegetables are tender.
5. Puree the soup with an immersion blender or in a blender until completely smooth.
6. Stir in the soy cream and mix well. Heat the soup again briefly.
7. Serve hot.
