A delicious alternative for a light meal or a side dish. Preparation time is about 30 minutes, serves 4.
Ingredients:
- 0.5 kg herring fillets
- 200 g plain yogurt or sour cream
- 1 dl breadcrumbs
- 3/4 tsp salt
- 1 egg
- 200 g cooked beets (mashed or grated)
- Black pepper to taste
- Oil for frying
Instructions:
1. Rinse the herring fillets and pat them dry. Chop them into small pieces.
2. In a bowl, mix together the herring fillets, beet puree, yogurt or sour cream, breadcrumbs, salt, egg, and black pepper.
3. Shape the mixture into small patties.
4. Heat oil in a pan over medium heat. Fry the patties for about 5-7 minutes on each side until they are golden brown.
5. Remove the patties and place them on paper towels to drain excess oil. Serve warm.
