This delicious and filling vegetable pasta is perfect for a quick dinner. It can be prepared in under 30 minutes and is enjoyed by the whole family! Preparation Time: 25 minutes
Serving Size: 4 servings
Ingredients:
- 250 g pasta (e.g., spaghetti or fusilli) - 1 tbsp olive oil
- 1 onion, chopped
- 2 garlic cloves, minced
- 1 bell pepper, diced
- 1 zucchini, sliced
- 200 g cherry tomatoes, halved
- 1 tsp dried oregano
- Salt and pepper to taste
- 50 g parmesan cheese, grated (optional)
- Fresh basil for garnish (optional)
Instructions:
1. Cook the pasta in salted water according to package instructions until al dente. Drain and reserve a little cooking water. 2. Heat olive oil in a large pan over medium heat. Add the chopped onion and sauté until soft.
3. Add minced garlic and diced bell pepper to the pan. Cook for about 3-4 minutes.
4. Stir in the sliced zucchini and cherry tomatoes. Cook for another 5 minutes until the vegetables are tender.
5. Season the mixture with oregano, salt, and pepper. Toss in the cooked pasta. If the pasta seems dry, add a little reserved cooking water.
6. Serve the pasta topped with grated parmesan cheese and fresh basil.
