A delicious herring recipe featuring tasty anchovy fillets and fresh parsley, creating a perfect filling. The rolls are pan-fried to a golden brown and served with lemon juice. Preparation Time: 45 minutes

Ingredients:
- 500 g herring
- Filling:
- 1 jar of anchovy fillets
- 1 bunch of parsley
- Black pepper, to taste
- A pinch of thyme
- 1 tbsp mustard
- For Breading:
- 1-2 eggs
- 3/4 dl all-purpose flour
- A pinch of salt
- For Frying:
- 5 tbsp oil
- Juice of 1 lemon
Instructions:
1. Clean the herring and remove the backbone.
2. Lay half of the herring fillets on a sheet of parchment paper with the skin side down.
3. Drain the anchovies and chop them together with the parsley until finely minced.
4. Add black pepper, thyme, and mustard to the mixture and mix well.
5. Spread the anchovy-parsley filling over the herring fillets.
6. Roll up the herring fillets and secure with toothpicks if necessary.
7. In a bowl, beat the eggs and mix the flour and salt in a separate dish.
8. Dip the herring rolls first in the egg mixture, then coat with flour.
9. Heat the oil in a frying pan and fry the herring rolls until golden brown on both sides.
10. Squeeze the juice of one lemon over the rolls before serving.
