A tasty alternative to meat patties, these vegetable patties are easy to make and perfect for both everyday meals and special occasions. Preparation Time: 30 minutes
Serving Size: 4 patties
Ingredients:
- 1 can (400 g) chickpeas
- 1 medium carrot, grated
- 1 small zucchini, grated
- 1 dl rolled oats
- 1/2 dl fresh parsley, chopped
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp paprika
- 1 tbsp olive oil for frying
Instructions:
1. Rinse the chickpeas thoroughly and drain.
2. Blend the chickpeas using an immersion blender or food processor until nearly smooth.
3. Add the grated carrot and zucchini to the chickpeas.
4. Mix in the rolled oats, chopped parsley, salt, black pepper, and paprika. Stir well until all ingredients are combined.
5. Shape the mixture into four patties.
6. Heat olive oil in a skillet over medium heat. Fry the patties for about 5-7 minutes on each side until golden brown.
7. Serve warm with a salad or bread.
