Ingredients:
- 300 g risotto rice
- 1 l vegetable broth
- 200 g fresh mushrooms (e.g., button mushrooms or chanterelles)
- 1 small onion
- 2 garlic cloves
- 100 ml white wine
- 50 g Parmesan cheese (grated)
- 2 tbsp olive oil
- 50 g butter
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions:
1. Sauté the chopped onion and garlic in olive oil over medium heat until soft.
2. Add the chopped mushrooms and cook for about 5 minutes until golden brown.
3. Add the risotto rice to the pan and stir well to coat the rice with the oil.
4. Pour in the white wine and let it evaporate until almost absorbed by the rice.
5. Gradually add hot vegetable broth one ladle at a time, stirring continuously. Add the next ladle only when the previous one is absorbed.
6. Continue this process until the rice is cooked but still al dente, about 18-20 minutes.
7. Once the rice is ready, remove the pan from heat and stir in the butter and Parmesan cheese. Season with salt and pepper.
8. Serve immediately, garnished with fresh parsley.
