Ingredients:
- 300 g pasta (e.g., spaghetti) - 150 g bacon or pancetta, chopped
- 2 eggs
- 100 g Parmesan cheese, grated
- 200 ml cream
- Salt
- Black pepper
- Fresh parsley (optional)
Instructions:
1. Cook the pasta in salted water according to the package instructions until al dente.2. Meanwhile, fry the bacon in a pan over medium heat until crispy. Remove from the pan and drain excess fat.
3. In a bowl, whisk together the eggs, cream, and grated Parmesan cheese. Season with salt and black pepper.
4. When the pasta is cooked, drain it and save a bit of the cooking water.
5. Add the hot pasta to the pan with the bacon and mix well.
6. Remove the pan from heat and quickly add the egg mixture to the pasta, stirring to ensure the eggs cook slightly with the heat of the pasta. If the mixture seems too thick, add a little reserved pasta water.
7. Serve immediately, garnished with fresh parsley if desired.
