This delightful recipe features basil-stuffed Baltic herring patties paired with a refreshing mustard potato salad. Prepare the potato salad the day before for a quick meal.
Ingredients:
- Potato Salad:- 500 g potatoes
- 1 dl spring onions or chives
- 2 tbsp mustard
- 2 tbsp oil
- 1 dl cream or yogurt-based dressing
- Salt and pepper to taste
- Basil-Stuffed Herring Patties:
- 400 g herring fillets
- 1 dl fresh basil
- 2 tbsp pine nuts
- 1 garlic clove
- 2 tbsp olive oil
- Salt and black pepper to taste
- Breadcrumbs
- Butter for frying
Instructions:
1. Prepare the Potato Salad: Slice the potatoes and finely chop the spring onions or chives. In a bowl, mix all the potato salad ingredients, taste and adjust seasoning, then refrigerate to let the flavors meld.2. Prepare the Herring Patties: Lay the herring fillets skin side down on parchment paper. Season the tops with salt and black pepper.
3. Make the Filling: Finely chop the basil, pine nuts, and garlic. Combine in a small bowl and stir in the olive oil. Spread the filling on half of the herring fillets and cover with the remaining fillets.
4. Fry the Patties: Dredge the herring patties in breadcrumbs and fry in butter in a skillet until golden and crispy.
5. Serve: Plate the herring patties alongside the mustard potato salad.
