Ingredients:
- 2 dl fresh wild herbs (e.g., nettles, cow parsley, dandelion leaves)
- 1 dl salad mix (e.g., lettuce, arugula)
- 1 cucumber
- 1 tomato
- 1/2 red onion
- 1/4 dl olive oil
- 2 tbsp balsamic vinegar
- Salt and pepper to taste
Instructions:
1. Rinse the wild herbs and salad mix thoroughly in cold water.
2. Chop the cucumber, tomato, and red onion into small pieces.
3. In a large bowl, combine the wild herbs and salad mix.
4. Add the chopped cucumber, tomato, and red onion to the salad.
5. In a separate bowl, whisk together the olive oil, balsamic vinegar, salt, and pepper.
6. Pour the dressing over the salad and toss gently to combine.
7. Serve immediately.
