Wild Boar Meatballs with Red Wine Sauce

Ingredients:
- 500 g wild boar (ground)
- 1 dl breadcrumbs
- 1 dl whole milk
- 1 onion (finely chopped)
- 2 garlic cloves (crushed)
- 2 tbsp fresh sage (chopped)
- 1 tbsp juniper berries (crushed)
- 1 tsp salt
- 1/2 tsp black pepper
- 1 egg
- 2 tbsp olive oil
Red Wine Sauce:
- 2 dl red wine
- 1 dl beef broth
- 1 tbsp butter
- Salt and pepper to taste
Mashed Fingerling Potatoes:
- 500 g fingerling potatoes
- 1 dl whole milk
- 50 g butter
- Salt to taste
Instructions:
1. In a bowl, combine the ground wild boar, breadcrumbs, milk, onion, garlic, sage, juniper berries, salt, pepper, and egg. Mix until the mixture is smooth.
2. Form the mixture into small meatballs.
3. Heat the olive oil in a frying pan and cook the meatballs until golden brown on all sides. Transfer them to a baking dish.
4. For the red wine sauce, pour the red wine and beef broth into the pan, bringing it to a boil until slightly thickened. Add the butter and season with salt and pepper.
5. Pour the sauce over the meatballs in the baking dish and bake at 180°C (350°F) for about 20 minutes.
6. Cook the fingerling potatoes in salted water until tender. Mash them with milk and butter, seasoning with salt.
7. Serve the wild boar meatballs with the red wine sauce alongside the mashed fingerling potatoes.
