Ingredients
- 4 small potatoes - ½ cup soy protein
- 1 small garlic clove
- ½ tsp black pepper

- ½ cup milk
- 1 package frozen green beans (or can of kidney beans)
- 1-4 tsp butter or margarine
- ½ tsp tomato paste
- 1 onion
- Optional additional garlic
- 1½ cups water, if needed
Instructions
1. Boil the potatoes with their skins in salted water until soft. Peel and mash them in a bowl. 2. Prepare the soy protein: soak it in hot water for about 10 minutes until soft. Drain any excess liquid.
3. Finely chop the onion and garlic. Sauté them in butter or margarine in a pan until soft.
4. In a bowl, combine the mashed potatoes, soaked soy protein, sautéed onion, and spices. Add the milk and mix until smooth.
5. Shape the potato mixture into small croquette-shaped balls or patties.
6. Fry the croquettes in oil or butter until golden brown and crispy.
7. Prepare the bean soy sauce: mix the green beans, tomato paste, and add water if necessary. Season with salt, pepper, and your preferred spices. Heat the sauce on low for a few minutes.
8. Serve the potato croquettes with the bean soy sauce.
