Citrusy Pulled Pork

A delicious and tender pulled pork seasoned with lemon, perfect for finger food at parties or as an appetizer.
Preparation Time: 2-4 hours
Serving Size: 4-6 people

Ingredients:

- 1 kg pork shoulder or neck
- 75 g toffee butter
- ½-1 preserved lemon
- 1 onion
- 1 bay leaf
- 3 garlic cloves
- ½-1 tsp Pop’s Pimen (salt)
- 1-2 tbsp honey
- sour cream
- fresh arugula or other salad greens
- 1-2 additional onions
- 1-2 dl goji berries
- pita bread

Instructions:

1. In a pot, add the toffee butter and let it melt over low heat.
2. Peel the onion and garlic cloves. Add the meat and whole garlic cloves to the pot. Slice the onion and add it next to the meat.
3. Add the bay leaf, preserved lemon, and a bit of chili to the pot.
4. Cover with a lid and let the meat simmer on low heat for at least two hours, preferably four hours. Ensure the pot does not lose too much liquid, adding a splash of water if needed.
5. Place the goji berries in a heatproof bowl and pour hot water over them until they are covered. Let them soak up the liquid.
6. Once the meat is cooked, remove it from the pot and pour the concentrated sauce into a bowl.
7. Shred the meat into strips using two forks and taste the sauce. Add honey, chili, and a pinch of salt as needed.
8. Rinse the arugula and let it dry. Warm the pita bread in the oven or toaster.
9. Arrange the ingredients beautifully in bowls and the bread in a basket so everyone can assemble their own portions.
