Ingredients:

- 500 g herring fillets
- Salt to taste
- Fresh dill
- 2 medium-sized carrots
- 1 onion
- 3 garlic cloves
- 1 stalk of celery (optional)
- 1 lemongrass stalk (thinly sliced)
- Oil for frying

Instructions:

1. Place the herring fillets on a cutting board and sprinkle salt on top.
2. Add fresh dill on each fillet and roll them up.
3. Arrange the herring rolls in a shallow frying pan.
4. Slice the carrots into thin rounds or create thin strips using a peeler or cheese slicer.
5. Cut the onion into rings and add it to the pan with the rolls.
6. Add the chopped garlic cloves and sliced lemongrass to the frying pan.
7. Optionally, add celery if desired.
8. Drizzle a little oil over the rolls and cover the pan with a lid.
9. Let it simmer on low heat for about 40-50 minutes until the fish is cooked and the vegetables are tender.
