These tasty vegetable wraps are a perfect vegetarian meal that is easy to prepare and delightful to enjoy.

Serving Size: 4 wraps
Ingredients:
- 4 whole wheat tortillas
- 1 avocado
- 1 bell pepper (preferably red or yellow)
- 1 cucumber
- 1 carrot
- 100 g lettuce (e.g., iceberg or arugula)
- 100 g hummus
- 1 tablespoon olive oil
- Salt and pepper to taste
- Lemon juice (optional)
Instructions:
1. Rinse and chop all vegetables into small pieces: bell pepper, cucumber, and carrot.
2. Halve the avocado, remove the pit, and mash the flesh with a fork. Add lemon juice, salt, and pepper to taste.
3. Spread hummus evenly on each tortilla.
4. Place lettuce, chopped vegetables, and mashed avocado in the center of each tortilla.
5. Drizzle with olive oil, and season with salt and pepper.
6. Fold the edges of the tortilla inward and roll it tightly to form a wrap.
7. Repeat the process for all tortillas.
8. If desired, grill the wraps quickly in a pan to achieve a nice surface.
9. Serve immediately and enjoy!
