Ingredients:
- 250 g spaghetti
- 150 g bacon or pancetta
- 2 eggs
- 100 ml heavy cream
- 50 g grated Parmesan cheese
- Salt to taste
- Black pepper to taste
- Fresh parsley (optional)
Instructions:
1. Cook the spaghetti in salted water according to the package instructions.
2. Meanwhile, sauté the bacon in a pan until crispy. Remove from the pan and drain excess fat.
3. In a bowl, mix the eggs, cream, grated Parmesan cheese, salt, and black pepper.
4. Once the pasta is cooked, drain it while saving a bit of the cooking water.
5. Toss the hot pasta with the bacon in the pan. Then, quickly add the egg mixture and stir until the sauce thickens. Add reserved cooking water as needed for a creamy consistency.
6. Serve immediately, garnished with fresh parsley if desired.
