Ingredients:
- 1 kg fresh mussels
- 1 carrot
- 1 celery stalk
- 1 small leek
- 2 garlic cloves
- 100 ml white wine
- 2 tbsp olive oil
- Fresh parsley
- Salt and pepper to taste
Instructions:
1. Check that all mussels are alive: viable mussels will keep their shells closed. Tap any mussels that are slightly open on the table; if they close, they are good. Discard any that remain open.
2. Rinse the mussel shells under running water using a vegetable brush.
3. Peel and julienne the carrot, celery, and leek.
4. Heat the olive oil in a large pot. Add the sliced vegetables and crushed garlic, sauté for about 5 minutes.
5. Pour in the white wine and bring to a boil.
6. Add the mussels to the pot, cover with a lid, and cook for about 5-10 minutes until the mussels open.
7. Season with salt, pepper, and fresh parsley before serving.
