Ingredients:
- 400 g fish (e.g., salmon or perch)
- 2 tbsp olive oil
- 1 lemon (juice and zest)
- 2 garlic cloves (minced)
- 1 dl fresh herbs (e.g., parsley and dill)
- Salt to taste
- Pepper to taste
- 200 g vegetables (e.g., broccoli or bell peppers)
Instructions:
1. Preheat the oven to 200°C (390°F).
2. Place the fish in a baking dish and drizzle with olive oil, lemon juice, and lemon zest.
3. Add the minced garlic, salt, and pepper on top of the fish.
4. Chop the vegetables and arrange them around the fish in the dish.
5. Sprinkle the fresh herbs over the fish and vegetables.
6. Cover the dish with foil and bake in the oven for about 20-25 minutes, or until the fish is cooked through.
7. Serve immediately and enjoy!
