Serving Size: 4 servings
Ingredients:
- 8 large chicken breasts
- 5 tablespoons olive oil
- Sea salt
- Black pepper
- 4 shallots, chopped
- 4 garlic cloves, crushed with skins on
- Thyme
- Rosemary
- 2 bell peppers (e.g., red and yellow), sliced
- 2 zucchinis, sliced
- 200 g fresh mushrooms (e.g., button mushrooms), sliced
Instructions:
1. Heat olive oil in a large skillet over medium heat.
2. Season the chicken breasts with sea salt and black pepper. Add them to the skillet and cook for about 6-7 minutes on each side, until cooked through. Remove the chicken from the skillet and set aside.
3. In the same skillet, add the chopped shallots and crushed garlic. Sauté until the shallots are soft.
4. Add the sliced bell peppers, zucchini, and mushrooms to the skillet. Cook until the vegetables are tender.
5. Stir in thyme and rosemary to taste. Mix well.
6. Return the chicken breasts to the skillet on top of the vegetables and heat for a few more minutes.
7. Serve warm and enjoy!
