*Quick and colorful dish perfect for a healthy lunch or dinner. Prep time: 15 minutes. Serves: 4.*Ingredients:
- 2 tablespoons olive oil
- 1 bell pepper, sliced
- 1 cup broccoli florets
- 1 carrot, julienned
- 1 zucchini, sliced
- 2 cloves garlic, minced
- 2 tablespoons soy sauce
- 1 teaspoon sesame oil
- Salt and pepper to taste
- Cooked rice or noodles (for serving)
Instructions:
1. Heat olive oil in a large skillet over medium-high heat.
2. Add garlic and sauté for about 30 seconds until fragrant.
3. Add bell pepper, broccoli, carrot, and zucchini to the skillet. Stir-fry for about 5-7 minutes until the vegetables are tender-crisp.
4. Pour in the soy sauce and sesame oil, stirring to combine. Cook for an additional 2 minutes.
5. Season with salt and pepper to taste.
6. Serve hot over cooked rice or noodles.
