A creamy and fresh mushroom salad that is a traditional dish for Christmas tables. Prepare this delight on Christmas Eve for the best flavor experience. Preparation Time: 30 minutes + chilling time
Serving Size: 4-6 people
Ingredients:
- 4 dl salted mushrooms
- 1 small onion
- ½ apple (Granny Smith)
- 1 tsp white pepper
- 1.5 dl heavy cream
- 2 tsp vinegar
Instructions:
1. Soak the salted mushrooms in cold water. Change the soaking water if needed until the desired saltiness is achieved. Taste the mushrooms during soaking.
2. Drain the mushrooms well and squeeze out any excess water.
3. Chop the mushrooms, apple, and onion into small pieces.
4. Mix the chopped mushrooms, apple, and onion together. Season the mixture with white pepper.
5. Whip the cream until it thickens slightly. Add vinegar drop by drop, tasting as you go.
6. Fold the mushroom mixture into the whipped cream.
7. Cover the dish with plastic wrap and place a plate on top to weigh it down. Refrigerate the salad to chill for the following day.
