Sautéed Mushroom Pasta with Soy Butter

Ingredients:
- 300 g pasta
- 200 g fresh mushrooms (e.g. button mushrooms or chanterelles)
- 2 tbsp soy sauce
- 2 tbsp butter
- 1 onion
- 2 garlic cloves
- 100 ml vegetable broth
- 1/2 tsp black pepper
- Fresh parsley (for garnish)
Instructions:
1. Cook the pasta according to package instructions in salted water. Drain and reserve a bit of the pasta water.
2. Peel and chop the onion and garlic.
3. Heat the butter in a skillet over medium heat. Add the onion and garlic, sauté until soft.
4. Add the chopped mushrooms to the skillet and cook until golden brown.
5. Pour the soy sauce and vegetable broth over the mushrooms. Allow to simmer for a few minutes.
6. Stir in the cooked pasta with the mushrooms and sauce. Add reserved pasta water if the sauce is too thick.
7. Season with black pepper and mix well.
8. Serve the pasta garnished with chopped fresh parsley.
