A delicious mushroom and potato curry that combines firm potatoes and fresh mushrooms in a tasty curry sauce. Perfect as a main dish or a side.

Ingredients

- 3 small firm potatoes
- 0.5 dl celery stalks
- 1 tbsp fresh parsley
- 0.5 tsp curry paste
- 0.5 tsp salt
- 2 tbsp olive oil
- 1 tbsp lemon juice
- Mild red chili (fresh or canned)
- Fresh button mushrooms or oyster mushrooms
- Pepper (to taste)
- Spring onions
- 2 cloves garlic

Instructions

1. Wash and scrub the potatoes, place them in a pot, and cover with water. Add salt and boil the potatoes for about 15 minutes until tender.
2. Chop the celery, spring onions, and garlic into small pieces. Heat the olive oil in a pan and add the celery, spring onions, and garlic. Sauté for about 3 minutes.
3. Add the curry paste, lemon juice, chopped mushrooms, and chili to the pan. Cook while stirring for about 5 minutes.
4. Drain the cooked potatoes and add them to the pan. Mix all the ingredients well and season with pepper and fresh parsley.
5. Serve immediately while warm.
