Ingredients:

- 300 g sliced chicken or other meat
- 2 tablespoons oil (such as canola or sesame oil)
- 1 red bell pepper, sliced
- 1 onion, sliced
- 2-3 garlic cloves, crushed
- 1 tablespoon fresh ginger, grated
- 2 tablespoons soy sauce
- 1 tablespoon honey or sugar
- 1-2 tablespoons red curry paste (to taste)
- 100 ml water
- Salt and pepper to taste
- Fresh herbs (such as cilantro) for garnish

Instructions:

1. Heat a large frying pan or wok over medium heat and add the oil.
2. Add the sliced meat to the pan and cook for about 2-3 minutes until the meat is cooked through.
3. Add the onion, bell pepper, garlic, and ginger to the pan. Sauté for another 2-3 minutes until the vegetables are tender.
4. Stir in the soy sauce, honey, red curry paste, and water. Allow to simmer for a few minutes until the sauce thickens.
5. Season with salt and pepper. Serve over rice and garnish with fresh herbs.
