Sweet Potato with Pulled Pork

A delicious sweet potato dish topped with savory pulled pork, perfect for warming up those chilly January days. Preparation Time: 45 minutes
Serving Size: 2-4 servings
Ingredients:
- 2 large sweet potatoes - 300 g pulled pork (prepared or homemade)
- 100 g feta cheese
- 1 can of beans (such as black beans or kidney beans)
- 2 tablespoons olive oil
- Salt and pepper to taste
- Fresh cilantro or parsley for garnish (optional)
Instructions:
1. Preheat the oven to 200°C (400°F).2. Wash the sweet potatoes thoroughly and dry them. Poke holes in them with a fork.
3. Place the sweet potatoes on a baking sheet and bake in the oven for about 30-35 minutes, until soft.
4. While the sweet potatoes are baking, heat the pulled pork in a skillet over medium heat.
5. Drain and rinse the beans. Add the beans to the pulled pork and heat for a few minutes.
6. Remove the sweet potatoes from the oven and cut them open lengthwise, but do not cut all the way through.
7. Fill the sweet potatoes with the pulled pork and bean mixture.
8. Crumble feta cheese on top of the filling and season with salt and pepper.
9. Garnish with fresh cilantro or parsley before serving.
