Ingredients:
- 500 g chicken breast fillets
- 2 tbsp olive oil
- 1 onion, chopped
- 2 garlic cloves, minced
- 1 bell pepper, diced
- 2 medium carrots, sliced
- 400 g crushed tomatoes
- 1 tbsp paprika
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp chili powder (optional)
- 1/2 tsp dried thyme
- 100 ml chicken broth
- Fresh parsley for garnish
Instructions:
1. Heat the olive oil in a large skillet over medium heat.
2. Add the chopped onion and sauté until softened.
3. Stir in the minced garlic and sauté for another minute.
4. Add the chicken breast fillets and cook until they are golden brown.
5. Add the bell pepper and carrots, mixing all the ingredients well.
6. Pour in the crushed tomatoes and chicken broth. Season with paprika, salt, black pepper, chili powder, and thyme.
7. Let the stew simmer on low heat for about 30 minutes, until the chicken is cooked through and the vegetables are tender.
8. Serve warm, garnished with fresh parsley.
