Sesame Schnitzel with Middle Eastern Salad

Ingredients:
- 2 x 160 g boneless chicken breasts
- A pinch of fine sea salt
- 100 ml all-purpose flour
- 2 eggs
- 1 + 1 tbsp sesame seeds
- 200 ml panko breadcrumbs
- A little fine sea salt
- A little freshly ground black pepper
- Cooking oil (canola) for frying
Middle Eastern Salad:
- A handful of cherry tomatoes
- Half a cucumber
- 1 spring onion with greens
- 1 tbsp chopped fresh parsley
- 1 tbsp chopped fresh mint
- 1 tsp dried oregano
- 50 g feta cheese, sliced
- 2 tsp lemon juice
- 2 tbsp cooking oil
- A pinch of salt
- A little freshly ground black pepper
- 1 tsp liquid honey
Instructions:
1. Flatten the chicken breasts to about 1-1.5 cm thickness between plastic wrap and sprinkle with fine sea salt. Let marinate for 30-60 minutes.
2. Toast 1 tbsp sesame seeds in a dry pan and crush them finely.
3. In a separate bowl, mix panko, toasted sesame seeds, fine sea salt, and black pepper.
4. Crack the two eggs into another bowl and whisk until smooth. Place the flour in a third bowl.
5. Pour cooking oil into a frying pan to about 2 cm deep and heat.
6. Pat the chicken breasts dry with paper towels, then coat them in flour, dip in the egg, and finally coat with the sesame-panko mixture until evenly covered.
7. Fry the schnitzels in hot oil on both sides until golden brown.
8. For the salad: Rinse the cherry tomatoes and cut them into quarters. Peel the cucumber, cut it into four strips, remove the seeds, and chop into pieces the same size as the tomatoes.
9. Chop the spring onion, parsley, and mint. Cut the feta into small pieces.
10. Combine all the salad ingredients in a bowl.
11. For the dressing, mix lemon juice, cooking oil, salt, black pepper, and honey. Drizzle the dressing over the salad and toss gently.
12. Serve the sesame schnitzels with the Middle Eastern salad. Enjoy!
