Ingredients:
- 1 cup quinoa
- 2 cups water
- 1 avocado
- 1 small cucumber
- 1 red bell pepper
- 1/2 cup black beans (cooked)
- 1/2 cup cherry tomatoes
- 1/4 cup fresh cilantro
- 2 tablespoons olive oil
- 1 tablespoon lime juice
- Salt and pepper to taste
Instructions:
1. Rinse the quinoa under cold water and cook it in two cups of water. Bring to a boil and simmer for about 15 minutes or until the water is absorbed and the quinoa is tender.
2. Meanwhile, prepare the fresh vegetables. Peel and slice the avocado, cucumber, and bell pepper. Halve the cherry tomatoes.
3. Once the quinoa is cooked, divide it between two bowls.
4. Add the black beans, sliced vegetables, and cherry tomatoes to the bowls.
5. In a small bowl, mix together the olive oil, lime juice, salt, and pepper, then drizzle the dressing over the Buddha Bowls.
6. Finish with fresh cilantro and serve immediately.
