A delicious and juicy dish that can be prepared on the grill, perfect for a special occasion or weekend gathering.

Ingredients:

- 2.2 lbs pork belly
- 2 tbsp salt
- 1 tbsp sugar
- 1 tbsp black pepper
- 1 tbsp paprika
- 1 tbsp garlic powder
- 1 tsp cayenne pepper
- 2 tbsp olive oil
- Smoking wood (e.g., apple or hickory)

Instructions:

1. In a bowl, mix together salt, sugar, black pepper, paprika, garlic powder, and cayenne pepper.
2. Rub the spice mixture evenly over the surface of the pork belly. Cover with plastic wrap and let it marinate in the refrigerator for at least 1 hour, preferably overnight.
3. Preheat the grill to about 225–250°F (110–120°C) and add the smoking wood to the grill.
4. Place the pork belly in the center of the grill, away from direct heat. Close the lid and smoke for about 4 hours, until the internal temperature reaches 158°F (70°C).
5. Remove the pork belly from the grill and let it rest for 15 minutes before slicing.
6. Slice and serve warm.
