A delicious and comforting maple-glazed pork belly that roasts to perfection in the oven. Perfect for a cozy November evening, served alongside roasted Brussels sprouts and almonds.

Ingredients:

- 1 kg pork belly
- 4 tablespoons maple syrup
- 1 tablespoon Maldon salt (or sea salt)
- 500 g Brussels sprouts
- 200 g kale
- 100 g almonds
- 2 tablespoons olive oil
- 1 teaspoon black pepper

Instructions:

1. Preheat the oven to 150°C (300°F).
2. Season the pork belly with maple syrup, salt, and black pepper. Allow it to marinate for a short while.
3. Place the pork belly in a roasting pan, skin side up, and cover it with foil.
4. Roast in the oven for 1.5 hours. Remove the foil, flip the pork belly so the skin side is down, and roast for an additional 15-20 minutes until the skin is crispy.
5. Rinse the Brussels sprouts and kale. Halve the Brussels sprouts and add them to the roasting pan. Add the kale and almonds.
6. Drizzle with olive oil, season with salt and pepper. Roast in the oven for 10 minutes.
7. Serve the pork belly with the roasted Brussels sprouts and almonds, drizzled with additional maple syrup and sprinkled with flaky salt.
