Ingredients:
- 500 g fresh fish (e.g., perch or pike)
- 1 l fish stock
- 2 potatoes, diced
- 1 carrot, sliced
- 1 onion, chopped
- 2 dl cream
- 1 tbsp butter
- 1 bay leaf
- Salt and pepper to taste
- Fresh dill for garnish
Instructions:
1. Melt the butter in a large pot and add the chopped onion. Sauté the onion until it is soft.
2. Pour in the fish stock, then add the diced potatoes, sliced carrot, and bay leaf. Cook for about 15 minutes, until the potatoes are nearly tender.
3. Add the fish to the pot and cook for an additional 10 minutes, until the fish is cooked through.
4. Stir in the cream and mix well. Season with salt and pepper.
5. Remove the bay leaf and serve the soup garnished with fresh dill.
