A deliciously smooth tomato sauce that's easy to prepare without cooking. Perfect for dipping, spreading on bread, or as a side dish. Preparation Time: 15 minutes
Serving Size: 4-6 servings
Ingredients:
- 500 g slightly overripe tomatoes (e.g., cherry tomatoes) - ½ green chili (seeds removed for less heat)
- 1 tsp cumin
- Salt to taste
- 5 tbsp good quality olive oil
Instructions:
1. Cut the tomatoes into quarters. 2. Place the tomatoes, green chili, and cumin in a blender. Blend until finely pureed.
3. Continue blending and gradually add the olive oil until the mixture emulsifies and thickens.
4. Add salt to taste.
5. Transfer the sauce to a fine-mesh strainer and press it through to remove skins and other solids.
6. Store the sauce in a sealed container in the refrigerator, where it will stay fresh for 2 days.
