A delightful, silky tomato sauce that is easy to prepare without cooking. Perfect for dipping, spreading on bread, or serving alongside fish and vegetables. Preparation Time: 15 minutes
Serving Size: 4-6 servings
Ingredients:
- 500 g ripe tomatoes - ½ green chili (seeds can be removed for less heat)
- 1 tsp cumin
- Salt to taste
- 5 tbsp good quality olive oil
Instructions:
1. Cut the tomatoes into quarters. 2. Place the tomatoes, chili, and cumin in a blender. Blend until the mixture is very smooth.
3. Continue blending and gradually add the olive oil. The mixture should emulsify and thicken.
4. Add salt to taste.
5. Strain the sauce through a fine mesh sieve, pressing down to remove any skins or remaining solids.
6. Store the sauce in a sealed container in the refrigerator for up to 2 days.
