A delicious and unique take on traditional pulled pork, with salmiakki adding an intriguing depth of flavor. Perfect served with boiled potatoes.
Preparation Time: 8-10 hours
Serving Size: 6-8
Ingredients:
- 2.5-3 kg unseasoned pork shoulder
- Generous amount of grill seasoning
- 1-2 dl salmiakki mixer
- Salt, to taste
- Fresh coriander or parsley, for garnish
Instructions:
1. Rub the surface of the pork shoulder thoroughly with grill seasoning.
2. Place the pork in a baking dish and drizzle about 1 dl of salmiakki mixer over it.
3. Cover the dish with aluminum foil and let the meat slow-cook in the oven at 120°C (250°F) for at least 7 hours. Check that the meat is tender by testing with a fork.
4. Allow the meat to cool slightly, then shred it into pieces using forks. You can also use a knife to shorten the strands.
5. Pour the juices from the baking dish into a pot, add another 1 dl of salmiakki, and reduce it by half over medium heat.
6. Arrange the pulled pork on a serving platter, drizzle with the reduced juices, and check for salt.
7. Warm in the oven at 175°C (350°F) for about 20 minutes.
8. Finally, garnish with fresh parsley or coriander before serving.
