A refreshing Israeli salad packed with flavor and color, perfect as a side dish or a light main course. Filled with fresh vegetables and tender chickpeas, it’s nutritious and delicious.

Ingredients:
- 250 g cucumber, diced
- 3 tomatoes, diced
- ½ red onion, chopped
- 1 red bell pepper, diced
- 1 small green chili, finely chopped or chili flakes
- A few torn lettuce leaves (e.g., Romaine)
- Juice of 1 lemon
- Salt and black pepper to taste
- 2-3 tablespoons good quality olive oil
- ½ cup cooked chickpeas
- Tahini dressing (tahini, lemon juice, garlic, salt, and water)
Instructions:
1. Prepare the vegetables: dice the cucumber, tomatoes, red onion, and red bell pepper. Chop the green chili.
2. In a large bowl, combine all the vegetables. Add the torn lettuce leaves.
3. Season the salad with olive oil, lemon juice, salt, and black pepper. Mix well.
4. Top with the cooked chickpeas and drizzle tahini dressing over the salad.
5. Serve immediately and enjoy!
