A delicious and refreshing new potato salad perfect for summer meals. This salad is easy to prepare and offers a tasty combination of various ingredients. Preparation Time: 30 minutes + 2 hours marinating time
Serving Size: 6-8 servings
Ingredients:
- 1 kg small, boiled new potatoes - 1 bunch of spring onions with greens
- 1 bunch of large red radishes
- 1 green tart apple
- 1 jar of capers
- 1 bunch of dill
Dressing #1:
- 3 dl beef or vegetable broth (make it a bit stronger than usual)
- ½ dl Muscatel vinegar
- liquid drained from capers
Dressing #2:
- 1 jar of sour cream
- 4 tbsp Hellman's mayonnaise
- salt
- pepper
Instructions:
1. Boil the new potatoes in salted water until cooked. 2. Meanwhile, prepare Dressing #1 by mixing all its ingredients together.
3. Cook the potatoes until al dente, halve them, and let them cool in Dressing #1 at room temperature for a couple of hours.
4. After a couple of hours, drain the dressing. Chop the spring onions and their greens along with the dill.
5. Cut the radishes into wedges and dice the apple. In a bowl, gently mix all salad ingredients except for the dill.
6. Combine the ingredients for Dressing #2 and pour it over the salad. Finish with a sprinkle of chopped dill on top.
