Ingredients:

- 7 boiled potatoes
- 1 leek or 2 green onions with tops
- 2 pickles
- ½ cup capers
- ½ cup oil
- ½ cup white wine vinegar
- 1-2 tablespoons mustard
- Salt to taste
- Black pepper to taste
- Fresh parsley for garnish

Instructions:

1. Cube the cooked, peeled, and cooled potatoes.
2. Chop the leek or green onions and dice the pickles.
3. Place all the ingredients in a bowl.
4. Mix the dressing ingredients (oil, white wine vinegar, mustard, salt, and black pepper) together and pour over the salad.
5. Gently stir all the ingredients together.
6. Garnish with chopped parsley and capers.
7. Serve immediately or let it marinate in the refrigerator before serving.
