This vibrant and nutritious salad combines kale, lettuce, and seasonal vegetables for a refreshing and filling dish perfect for summer.
Ingredients:
- Kale
- Oak leaf lettuce
- Fresh parsley
- Spring onions
- Giant beans
- Carrots
- Green beans
- Lemon
- Olive oil
- Salt
- Pepper
Dressing:
- Dijon mustard
- Honey
- White wine vinegar
- Olive oil
- Salt
- Pepper
Instructions:
1. Preheat the oven to 200°C (400°F). Roast the giant beans in the oven until they are crispy and golden brown.
2. Peel and slice the carrots. Roast them in the oven until they are tender and slightly caramelized.
3. Blanch the green beans in boiling water for about 2-3 minutes, drain, and rinse with cold water. Season with lemon juice, salt, and pepper.
4. Chop the kale, oak leaf lettuce, parsley, and spring onions. Combine them in a large bowl.
5. Add the roasted giant beans, roasted carrots, and lemon-seasoned green beans to the salad mixture.
6. Prepare the dressing by mixing all the dressing ingredients together, then pour it over the salad.
7. Toss gently and serve immediately.
