Ingredients:
- 3-5 carrots
- Salt (game stock)
- Pepper
- 2-3 tbsp black currant jelly or rowan jelly
- 1 onion
- 50 g butter
- 4 dl cooking stock (game stock or demi-glace)
- 2-3 cloves garlic
- Salt and pepper
- 2-3 sprigs of rosemary
- 2 dl cream
- 1-2 cl gin (with some juniper berries)
- ½ fennel
- Oil
- Butter
Instructions:
1. Peel and slice the carrots into thin strips. Season with salt and pepper.
2. Sauté the onion in butter in a pan until soft. Add the carrots and continue to sauté for a few minutes.
3. Stir in the black currant jelly and mix well. Remove the filling from the pan and let it cool.
4. Roll the moose meat into an even layer and season with salt, pepper, and rosemary.
5. Spread the vegetable filling over the moose meat and roll it tightly, ensuring the filling stays inside.
6. Heat oil and butter in a pan. Brown the meat roll on all sides until it has a nice color.
7. Add the cooking stock and crushed garlic to the pan. Let it simmer gently for about 30 minutes.
8. Stir in the cream and gin, mixing well. Allow it to simmer for another 10 minutes until the sauce thickens.
9. Serve the rolled moose sliced and with the sauce. Garnish with fennel slices.
