This colorful chocolate cake is the perfect treat for celebrations. Moist and filled with a delicious cream cheese filling, it's easy to make without any beating!
Preparation Time: 1 hour
Serving Size: 12 servings
Ingredients:
- 3 dl all-purpose flour
- 2.5 dl sugar
- 1 dl cocoa powder
- 2 tsp baking soda
- 2 tsp baking powder
- 1 tsp vanilla extract
- A pinch of salt
- 2 eggs
- 3.5 dl milk
- 2.5 dl strong coffee
- 1 tsp apple cider vinegar
- 2.5 dl vegetable oil
Cream Cheese Filling and Vanilla Frosting:
- 400 g room temperature butter
- 1 dl powdered sugar
- 1 tsp vanilla extract
- 2 tbsp milk
- 400 g cream cheese
- 1 dl powdered sugar
- Red and blue food coloring
- Sugar stars for decoration
Instructions:
1. Preheat the oven to 175°C (350°F). Grease and flour two 20 cm cake pans.
2. In a dry bowl, mix together the flour, sugar, cocoa powder, baking soda, baking powder, vanilla extract, and salt.
3. In another bowl, combine the eggs, milk, coffee, apple cider vinegar, and vegetable oil.
4. Pour the liquid mixture through a sieve into the dry ingredients and gently mix until just combined.
5. Divide the batter between the cake pans and bake for about 30 minutes or until a toothpick comes out clean. Allow the cakes to cool on a wire rack.
6. Beat the room temperature butter, powdered sugar, vanilla extract, and milk with an electric mixer until light and fluffy.
7. In a separate bowl, mix the cream cheese and powdered sugar. Add half of the buttercream to the cream cheese mixture and mix well.
8. Fill the cake with the cream cheese filling. Color some of the buttercream red and some blue.
9. Cover the cake with red and white buttercream. Decorate with blue buttercream and sugar stars.
