Serving Size: 12 slices
Ingredients:
- 3 dl grated carrots
- 2 dl granulated sugar
- 1 dl brown sugar
- 1 dl vegetable oil
- 3 eggs
- 3 dl all-purpose flour
- 1.5 tsp baking powder
- 1 tsp baking soda
- 1 tsp ground cinnamon
- 0.5 tsp salt
- 1 dl chopped nuts (optional)
For the Vanilla Frosting:
- 250 g mascarpone cheese
- 2 dl heavy cream
- 1 dl powdered sugar
- 1 tsp vanilla sugar
For Decoration:
- Fondant (optional)
- Sprinkles or chopped nuts (optional)
Instructions:
1. Preheat the oven to 175°C (350°F). Grease and flour a cake pan.
2. In a bowl, mix the grated carrots, granulated sugar, brown sugar, vegetable oil, and eggs.
3. In another bowl, combine the all-purpose flour, baking powder, baking soda, ground cinnamon, and salt.
4. Combine the dry ingredients with the carrot mixture and mix until smooth. Add chopped nuts if desired.
5. Pour the batter into the prepared cake pan and bake for about 40-50 minutes, or until a toothpick comes out clean.
6. Allow the cake to cool before frosting.
7. To make the vanilla frosting, whip together the mascarpone cheese, heavy cream, powdered sugar, and vanilla sugar until fluffy.
8. Spread the vanilla frosting over the cooled cake.
9. Optionally, decorate the cake with fondant or sprinkle with nonpareils or chopped nuts.
10. Serve and enjoy!
