Ingredients:
- 2 dl cooked chickpeas
- 1 dl rolled oats
- 1 grated carrot
- 1 chopped red onion
- 2 garlic cloves, minced
- 1 tsp paprika powder
- 1 tsp salt
- 1/2 tsp pepper
- 2 tbsp olive oil
- Fresh herbs (e.g., parsley or basil)
Instructions:
1. Mash the chickpeas in a bowl using a fork or an immersion blender.
2. Add the rolled oats, grated carrot, chopped red onion, and minced garlic to the mashed chickpeas.
3. Season the mixture with paprika powder, salt, pepper, and chopped fresh herbs.
4. Mix all the ingredients well until a smooth dough forms.
5. Shape the dough into patties and place them on a baking sheet lined with parchment paper.
6. Brush the patties with olive oil.
7. Bake the patties in a preheated oven at 180°C (350°F) for about 25-30 minutes until they are golden brown.
8. Serve the patties with a salad or whole grain bread.
