These oat cookies combine a crispy exterior with a soft, rich plum filling. Perfect for dessert or a snack.
Preparation Time: 30 minutes
Serving Size: Makes about 12 cookies

Ingredients:

- 100 g rolled oats
- 100 g all-purpose flour
- 75 g sugar
- 75 g butter (softened)
- 1 egg
- 1 tsp vanilla sugar
- 1/2 tsp baking powder
- 150 g dried plums
- 50 ml water
- A pinch of salt

Instructions:

1. Prepare the filling: Chop the dried plums and cook them with water in a small saucepan until softened. Blend the mixture into a smooth paste and let it cool.
2. In a bowl, mix the rolled oats, all-purpose flour, sugar, vanilla sugar, baking powder, and salt.
3. Add the softened butter and egg to the dry ingredients. Mix until a smooth dough forms.
4. Take small pieces of dough and shape them into discs. Place a spoonful of the plum filling in the center of each disc and fold the edges over to form a cookie.
5. Place the cookies on a baking sheet lined with parchment paper and bake at 180°C (350°F) for about 12-15 minutes, or until golden brown.
6. Allow the cookies to cool before serving.
