These tasty vegetable patties are a perfect meat alternative and can be enjoyed as a main dish or a snack.Ingredients:
- 2 dl cooked chickpeas (canned or boiled)
- 1 dl oats
- 1 carrot (grated)
- 1 small onion (chopped)
- 2 garlic cloves (minced)
- 1 tbsp tahini
- 1 tbsp olive oil
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp paprika powder
- 1/2 tsp dried oregano
- 1/2 dl fresh parsley (chopped)
- Oil for frying
Instructions:
1. Rinse and drain the chickpeas if using canned. Mash the chickpeas with a fork or in a blender until smooth.
2. In a bowl, combine the mashed chickpeas with oats, grated carrot, chopped onion, minced garlic, tahini, olive oil, salt, black pepper, paprika, oregano, and parsley. Mix well.
3. Form the mixture into evenly sized patties.
4. Heat oil in a frying pan over medium heat. Cook the patties for about 4-5 minutes on each side until golden brown and crispy.
5. Serve with a salad or dipping sauce of your choice.
