A delicious and flavorful salami made from game meat and spices. This recipe allows you to create your own salami, perfect for snacking or as a meal.
Preparation Time: Approximately 6-8 weeks (including drying time)
Serving Size: About 2 kg

Ingredients:

- 2 kg game meat, cubed
- ½ kg pork belly fat, finely diced
- ½ dl very cold red wine (or Jallu)
- 45 g sea salt
- 10 cloves garlic, minced
- 4 tsp coarse black pepper
- 1 tsp dried thyme
- 1 tsp Insta Cure No. 2
- Hog casings, soaked for 30 minutes in cold water

Instructions:

1. Clean all tools and surfaces with a disinfectant.
2. In a bowl, mix game meat, pork fat, sea salt, garlic, black pepper, thyme, and Insta Cure No. 2.
3. Grind the mixture through a medium plate of a meat grinder.
4. Slowly add the cold red wine to the mixture and mix until well combined.
5. Chill the mixture in the refrigerator for about 30 minutes.
6. Stuff the mixture into the soaked hog casings, avoiding air pockets, and tie the ends.
7. Hang the sausages in a fridge at 13-15 °C with 60-70% humidity.
8. Allow to dry for 4-5 weeks until the salami is firm and dry.
9. Regularly check the salami for mold.
10. At the end of the drying period, vacuum pack the salami and store in a cool place.
