Servings: Approximately 1 kg
Ingredients:
- 1 kg pork (e.g., shoulder or leg)- 200 g pork fat
- 20 g salt
- 5 g black pepper
- 5 g garlic powder
- 5 g paprika powder
- 5 g sugar
- 1 g curing salt (nitrite)
- 75 ml buttermilk (or a chosen probiotic culture)
- 1 g spices (e.g., fennel or oregano)
- Egg (for binding, optional)
Instructions:
1. Cut the pork and pork fat into small pieces and grind them in a meat grinder until coarsely ground.2. Add the salt, black pepper, garlic powder, paprika powder, sugar, curing salt, and your chosen spices to the mixture. Mix thoroughly.
3. Incorporate the buttermilk (or selected probiotic culture) into the mixture and stir until smooth.
4. Stuff the mixture into salted sausage casings or other suitable casings.
5. Tie the sausages tightly and make small holes in the casing to allow air to escape.
6. Hang the sausages to dry in a cool, well-ventilated area for about 3 weeks.
7. Check the salami's drying progress regularly and enjoy when ready!
